Solander Dining celebrates botanicals and honors Daniel Solander, the naturalist who traveled on the Endeavour in 1768 to document Australia's plant life. With views of Sussex Street to the east and the lush atrium garden to the west, the restaurant offers modern Australian cuisine that embraces the finest regional and seasonal produce from sustainable sources in New South Wales.

The sophisticated and intimate space is ideal for memorable celebrations, whether it's a lunch or dinner for up to 130 guests. The interior boasts distinctive green and white geometric marble floors, plush dining chairs in rich jewel-toned velvets, warm hardwood tables, and elegant brass light fixtures.
