Established in 2016, this family owned and operated distillery is the first and only Gin & Whiskey Bar that has come from Mildura. Opening its doors in Melbourne’s Lygon Street a year ago, Fossey’s is THE place for any gin lover to visit.

Let’s start with something more traditional for those who appreciate the natural flavours and strength of gin. Fossey’s own creation has come up with an extraordinary ‘Original Gin’ which is crisp in flavour and hand-crafted to bring you the best possible product.
A small bit of history for you: at the heart of every gin you will find a Juniper Berry. At Fossey’s, this berry is supplied from the Ludlow area in the UK. From this sourcing, you will be letting liquid gold pass your lips with only the best ingredients being used to manufacture products.
Much like the unbeatable taste of ‘Original Gin,’ you will be drawn towards the bar where you will see the working distillery. This is a truly special sight, especially in the heart of the city. If you are lucky, you may even visit when the machinery is on! I feel like this needs to be somewhere closer to the start as it sets the scene. Swap with Purple.
Now for those who perhaps don’t love the strong taste of alcohol, we got you! After tasting a wide range of Fossey’s unique gins, we at HCS have agreed that the ‘Broken Heel Gin’ is undeniably delicious. With a sweet and floral flavour, this glamorous gin will blow you away!
Of course, you can drink this delectable gin straight, but we recommend having it with tonic because this mixture is seriously stunning! I mean, who doesn’t love a cheeky G&T?
Just as unique as the ‘Broken Heel’ gin, this venue is truly one of a kind! The building where Fossey’s is located only adds to the vibe of your experience. With exposed brick walls, candle lit tables, vintage décor and plush velvet sofas, you will feel like a true liquor connoisseur. All you need now is your top hat and tail coat!
Next up on our tasting experience we have another distinctive creation: ‘Shiraz Gin’. Now if you love red wines you will love this one! Utilising Shiraz grapes that are vine grown in Mildura, you get to taste Australian produce at its finest. Married with their signature gin flavour, Fossey’s has captured the essence of this fruity and peppery flavours. When drinking this, you will be transported to the vineyards of Mildura on a sunny afternoon.
For a truly immersive experience where else is better to drink this blossoming gin than in the outdoor seating area? You will be surrounded by the trees, the warm summer breeze and out in the sunshine. Don’t worry though, just because you are outside doesn’t mean you won’t get the full Fossey’s experience! Now for a crowd favourite at Fossey’s (and perhaps yours in the future) is the ‘Desert Lime Gin’. This standout drink harmonises the original gin recipe at Fossey’s with the citrus fruits from Australia’s desert lime trees. Incorporating flavours native to Australia, this gin will create the perfect summer drink for you and you friends!
While we are on the topic of friends, our classic Aussie Christmas is just around the corner! The festive season can be stressful, we totally get that. Worry no longer though because we have the perfect solution for you! When you visit Fossey’s you will be greeted with the sight of gin galore. With hundreds of bottles lining the shelves, it will be enough to make you gasp “oh my GIN!” out loud. There is an abundance of mouth-watering combinations of their own gin, these bottles will make the perfect gift for your family and friends this holiday season.
With any gin tasting you will need food and of course, Fossey’s won’t disappoint! They have a delicious tapas menu for you to share with your group with a wide range of treats available. Whilst you sip away on your gin board, dig into some baked camembert, honey red gum chicken wings or some gin fried chicken (seriously, how are you not already in the car?). These dishes are just a few of the specialties that Fossey’s offers, with toasties and desserts also available to order.
Of course the gin is the star of the show here but there are a range of other drinks available! Ranging from rum, whiskey, wines and beers, there are also special cocktails that feature Fossey’s house made gins to create one-of-a-kind drink. If you want to be taken to heaven, you must try the pink lemonade. This cocktail has ‘Broken Heel Gin’, strawberry, lemon and lemonade and is liquid gold. We recommend this drink if you want to hide the taste of alcohol (be careful though, you may not be able to stop!).
